fig & basil couscous

this couscous is a great side dish as we launch into fall, balanced with both lightness & flavor

Figs are back, back again <insert happy dance>. I think I may have drawn a little bit of attention to myself as I squealed with glee in Trader Joe’s this weekend. Oops. Obviously I had to start planning all of my fig-infused meals, which started with a delicious fig & basil couscous.

serves 3-4 people as a side dish

ingredients:

  • 1 cup of dry couscous
  • 2 cups of water
  • 3 tbs olive oil or balsamic vinegar (we used a gravenstein apple balsamic vinegar in ours)
  • 1 cup of roughly chopped figs
  • ¼ cup of chopped basil
  • 1/3 cup of feta cheese

 

Combine the dry couscous, water, & olive oil in a medium-sized pot. Cook on the stovetop at med-high heat until water boils. Turn off heat, cover, and let sit until all of the water has soaked in (about 10 minutes). Fluff with fork.

Next add the figs, basil, & feta cheese. Add a couple pinches of pepper & salt. Mix all together gently & served either warm or at room temperature. Go ahead - get figgy with it ;)
