summery watermelon salad
We absolutely love watermelon season. Growing up, my brother & I would split a watermelon in half & each grab a spoon for our own half! Let’s just say that watermelon was never wasted in our home. It immediately evokes memories of summer, pool-time, and basking in the sunshine. So when summer rolls around, I love to serve this simple watermelon salad that’s always a hit.
summer watermelon salad
- 1 small watermelon (~4 cups)
- 1 cup feta cheese
- ½ cup fresh basil
- 2 tbs reduced balsamic vinegar
Cut up the watermelon into ~½-¾ inch cubes and roughly chop the basil into small strips. Assemble in this order: cubed watermelon, feta cheese, chopped basil. Drizzle the balsamic vinegar on top. I leave the salad un-tossed until we’re ready to serve because it’s just a beautiful & colorful salad. Toss when you’re ready to serve and bon appetite! So easy, right??
