Yes, we know summer is technically over. But anyone in the northern hemisphere, and especially in California, knows and experiences what we have called an "indian summer". It's a glorious extension of summer when the temperatures are as hot as ever, the daylight hours are still long-ish, and it's still appropriate to wear white, go to the beach, and enjoy what may normally be summer-exclusive activities. 

So, for a few more months, even as we head into the changing leaves and upcoming holidays, we still get to enjoy summer and all that comes with it. This past weekend (in 90 degree heat), we decided to make a delicious twist on a brunch favorite, the mimosa.

recipe for watermelon mimosa cocktail:

ingredients:

  • chilled prosecco
  • 1 watermelon, juiced, or fresh bought watermelon juice
  • a sprig of mint

directions:

  • mix equal parts prosecco and juice (or to taste)
  • garnish with mint
  • drink up! preferably outside in the sunshine.

So easy and so so so refreshing. We've found that it makes a great bridal shower, Sunday brunch party, or even baby shower beverage... If serving at a baby shower or an event with children, there's a delicious non-alcoholic alternative you can make that's just as yummy!

recipe for watermelon "mocktail":

ingredients: 

  • 1 coconut la croix (1 can for every 2 drinks, roughly)
  • 1 watermelon, juiced, or fresh bought watermelon juice
  • 1 lime, or bought lime juice
  • a sprig of mint

directions:

  • mix equal parts watermelon juice and la croix
  • squeeze in half a lime
  • fill glass with ice
  • garnish with mint or lime wedge
