cherry tomato & goat cheese spicy steak tacos

cherry tomato & goat cheese spicy steak tacos

feeds 4 hungry people

ingredients:

  • 1/2 medium onion, diced
  • 2 16-oz cans black beans
  • 3 tbs cumin
  • 3 tbs chili powder
  • 1/2 cup hot & spicy bbq sauce (I prefer kinders hot bbq sauce)
  • 1 lb flank steak or thinly sliced ny strip steak
  • 4 tortillas
  • 1 cup cherry tomatoes, halved
  • goat cheese

Heat a medium-sized skillet on medium with two tablespoons of oil. When pan is hot, add the diced onion. Cook until tender or translucent. 

Meanwhile, rinse the black beans in a strainer. This helps remove the excess sodium that preserves the beans. Toss these into the pot with the cooked onions.

Next, add in the cumin, chili powder, and barbecue sauce. Stir together. Warm for about 10 minutes on medium-low heat. The longer the spices simmer, the more flavorful the beans. 

Meanwhile, salt & pepper both sides of the flank steak, then pan fry or grill. We cooked ours on the stove this time, at medium heat for a couple minutes a side for medium-doneness. Remove once cooked and let rest on a cutting board. After it has rested for a few minutes, slice into strips (remember to slice against the grain, not with the grain!).

While the steak is resting, heat up the tortillas on the stove. We have a gas range, so we place these directly on the stove-top over a low flame. I move these around consistently in a circle to spread the heat. Once it starts to blister or puff up, I flip to the other side and repeat. If you do not have a gas range, this can also be done in a skillet with a small amount of hot oil. Remove once warmed up.

Halve the cherry tomatoes. These will be used as a topper on the tacos, along with the goat cheese. Is your mouth watering yet?  

Time to start platting! Take 2 tortillas and fold up so they are leaning against each other. Then layer the spicy beans, flank steak, cherry tomatoes, and top with the goat cheese.
