tomatillo & chorizo breakfast tacos

So my husband just got back from Cabo (yes, without me. rude, I know..), and I've been absolutely craving these breakfast tacos. I typically only make these in Mexico, because it's part of our tradition. But I thought I'd treat us to these today, because well.. #treatyoself.

tomatillo & chorizo breakfast tacos

feeds 2 hambre (hungry) people

ingredients:

  • 4 eggs
  • 4 tortillas
  • 4 tomatillos, quartered
  • 1/2 onion, sliced
  • 1 avocado, sliced
  • chorizo or soyrizo
  • cotija cheese (to sprinkle on top)
  • cilantro, chopped (as a garnish)

Heat a medium saucepan on the stove at medium-low, and squeeze the chorizo out of the container into the pan. Break up into pieces, so it is evenly distributed on the pan. Cover with a splatter guard if you have one.. Stir occasionally. The chorizo will start to turn deeper in color. When one, drain the oil.

Slice the onion & add to a second pan with oil on medium heat. Meanwhile, remove the husks from the tomatillos, wash, and quarter. Add to the pan with the onions. Stir to keep the onions & tomatillos from burning. Cook until soft. 

Meanwhile, heat another pan on medium with a tablespoon of oil (yes, sorry, this is a 3-pan meal). When hot, crack the eggs into the pan. Scrambled eggs also work well with this recipe. Flip when the white is mainly cooked through & continue cooking to desired doneness. I prefer mine over-medium for this recipe, where the yolk is more gooey than runny. 

If you have a gas-range stove, heat the tortillas straight on the stove with a low flame. Move frequently & flip when the tortilla has started to brown. If you have an electric stove, this can be done in a pan instead. 

Let's plate! Set 2 tortillas on a plate, folded up in the middle. Then layer the tomatillos & onions, followed by the eggs (1 in each tortilla), & chorizo. Top with the sliced avocado & sprinkle on the cotija cheese. Garnish with the chopped cilantro.. and bon appetite!
