We’re loving fall - the changing colors, scarf & boots weather, and of course.. pumpkin flavored everything. I also have quite the love affair with moscow mules, or pretty much any kind of drink that involves ginger beer. So in the spirit of combining a fall flavor with an everyday favorite, we starting testing out pumpkin mules. With a little bit of fine tuning, and quite the taste testing panel (err, my husband and another friend), we believe we mastered the pumpkin spice mule.
And what better time to enjoy a pumpkin spice mule than around the holidays. We’ll definitely be enjoying this tasty cocktail while decorating the house for Christmas!
Pumpkin Spice Mule
Makes 1 cocktail
- 1 “shot” of pumpkin pie filling
- 1 shot unfiltered apple juice
- 2 shots of vodka
- 1/8 tsp vanilla extract
- 1 shot ginger beer
- 1 shot soda water
- Sprig of sage (for garnish)
In a shaker filled with ice, mix the first four ingredients (pumpkin pie filling, vanilla extract, vodka, and unfiltered apple juice).
Strain the mixture into a cup, preferably a moscow mule copper cup. Add the ginger beer & soda water. Stir.
Garnish with a sprig of sage & enjoy!
